Honey & Greek Yogurt Basque Cheesecake

This healthier version of the classic Basque cheesecake swaps refined sugar for honey and replaces half of the cream cheese with Greek yogurt, creating a lighter, higher-protein dessert without compromising on flavour.


Baked until deeply golden and served chilled, it has a deliciously rich, creamy texture without the need for a biscuit base. It looks impressive enough for dinner guests yet is wonderfully simple to make, making it perfect for picnics, garden parties or an easy weekend dessert.


Ingredients

  • 400g full-fat cream cheese

  • 200g Greek yogurt (5% works well)

  • 3 large eggs

  • 3 tbsp runny honey

  • 2 tbsp cornflour

  • 1 tsp vanilla extract

  • Finely grated zest of 1 lemon

To serve

  • Fresh mixed berries


Instructions

  1. Preheat the oven to 200°C (180°C fan). Line a 20cm round cake tin with baking parchment, allowing the paper to come above the sides to create the classic rustic look.

  2. Beat the cream cheese until smooth.

  3. Add the Greek yogurt and honey and mix until fully combined.

  4. Beat in the eggs, one at a time.

  5. Stir in the vanilla extract and lemon zest.

  6. Sift over the cornflour and gently mix until the batter is completely smooth.

  7. Pour into the prepared tin and bake for 40 to 45 minutes, until the top is deeply golden brown and the centre still has a slight wobble.

  8. Serve with plenty of fresh mixed berries.
