Grilled Peach, Chicken, Burrata & Prosciutto Salad

I made this after a mid-morning gym session when I was absolutely starving and wanted something quick, fresh and filling.
I always keep a tin of peaches in the cupboard and lightly grilling them is one of my favourite little kitchen tricks. It caramelises their natural sugars, bringing out their sweetness and giving them a wonderfully rich flavour. They're a brilliant, budget-friendly alternative when fresh peaches aren't in season.
Paired with creamy burrata, salty prosciutto, shredded chicken and crunchy walnuts, then finished with plenty of fresh basil and a drizzle of balsamic glaze, you've got a colourful, protein-packed lunch that's every bit as delicious as it looks.

Serves: 2
Ingredients
150g cooked chicken breast, shredded
1 burrata
4 peach halves (tinned in juice), drained
4 slices prosciutto
40g walnuts, roughly chopped
2 generous handfuls mixed salad leaves
Fresh basil leaves
Balsamic glaze
Freshly ground black pepper
Optional
Extra virgin olive oil
A squeeze of lemon
Method
Heat a griddle pan until hot and lightly char the peach halves for 2–3 minutes on each side.
Arrange the salad leaves between two bowls or plates.
Scatter over the shredded chicken and tear over the prosciutto.
Place the grilled peaches on top.
Tear the burrata into generous pieces and tuck it amongst the salad.
Sprinkle over the walnuts and plenty of fresh basil leaves.
Finish with a drizzle of balsamic glaze and black pepper. Add a drizzle of extra virgin olive oil and squeezr of lemon if you like.
Serve immediately.
